Ingredients
2 cups self raising flour
2 cups milk
1 overripe banana, mashed well
2.5 tablespoons sugar (any kind works)
2 teaspoons ground cinnamon
1 teaspoon baking powder (optional)
butter for frying
Method
- Sieve flour, cinnamon and baking powder into a bowl. Add sugar and mix together. Make a well in the middle of the bowl and add mashed banana and milk. Mix together until just combined and no dry patches remain. Do not over mix.
- Heat frypan to medium and grease with butter. Pour some batter into the pan to make your pancake. Heat until bubbles form on top. Flip the pancake and cook for another 2 minutes, until golden brown.
- Continue cooking the pancakes until all the batter is used. To keep pancakes warm between batches, place in a warm oven (about 50 degrees) or fold between a clean tea towel. Serve with fruit and maple syrup.
