Ingredients
2-3 overripe bananas, mashed
2 eggs, whisked
1/2 cup milk
20g butter, melted
2 cups self-raising flour
1 tablespoon ground cinnamon
1/2 cup (100g) firmly packed brown sugar
2/3 cup (75g) walnuts, crushed
extra butter to grease
Method
- Preheat the oven to 180°C and grease silicone loaf pan with soft butter. If you don’t have a silicon tray, line with baking paper and butter.
- Sift flour and ground cinnamon into a bowl. Add brown sugar and walnuts and mix through until evenly distributed. Then make a well in the centre of the mix.
- Mash bananas until gooey and not too lumpy. Add melted butter, milk and whisked eggs to the banana. Stir the banana mix together, then add to the dry mix. Stir wet and dry mix together until just combined and no dry bits remain, don’t over-mix past this point or the bread will be dense.
- Pour mix into the greased loaf tray and put into the oven for 60 – 75 mins or until a skewer inserted into the middle of the bread comes out clean.
