Ingredients
1.2kg potatoes
1 tbsp butter
¾ cup milk
600g tuna in spring water, drained
1 egg beaten
1 onion finely chopped
1 cup frozen peas & corn mix
75g breadcrumbs
Method
- Make the mashed potatoes by peeling potatoes and boiling them in a pot. Once soft, drain water, then add butter and milk and mash until smooth. Season with salt and pepper to taste, then set aside to cool.
- Fry onions in a pan over medium heat for 2 minutes, then set aside to cool.
- In a mixing bowl, put mashed potato, drained tuna, onion and peas & corn. In a separate bowl, beat egg, then add to potato mixture. Combine the mixture then bind together into patties with your hand.
- If time allows, set patties aside on a plate in the fridge for 30 mins, this will help them to maintain their shape.
- Fill a plate or shallow bowl with breadcrumbs and cover tuna patties with crumbs dipping them on either side.
- Add some oil to a frypan on medium heat, add the patties and fry on both sides for about 5 minutes each or until golden brown and cooked through. Serve with you favourite veggies/chips/coleslaw.
Tip:
This recipe works best with cold mashed potato and is a great way to use up leftover mash.
